On the Alpe, there are two stone vaults that serve as natural refrigerators. The owner explained to us that the left cellar is about 200 years old, while the right one was built by him and his family only a few years ago. These cellars consist of a three-layered "false" vault. In the inner vault, the stones are slightly sloped outward to prevent rainwater from entering the cellar. Between this vault and the outer vault is a layer of large pebbles that acts as a thermal barrier to prevent sunlight from heating the inner layer. Cooling is provided by the spring water that flows through the cellar.

The Refugio San Romerio is a charming overnight stop on the Via Valtellina. We had a delicious meal there (homemade pizzoccheri) and a good night's sleep.
