At the cheese dairy, the evening milk is kept and mixed the next day with the fresh morning milk. It is then poured into the famous cauldron which, as seen in the images, is heated by wood fire. This boiler has, in the case proposed at the head of the article, a capacity of 600 liters. Once the right temperature is reached, the cauldron is removed from the fire for curdling. Then the cutting and stirring are done by hand. And again the cooking. Finally, the cheese is removed from the cauldron using a cloth, encircled and pressed.
