Floods from the Enz and Metter rivers permanently threatened the suburbs and the lower town. The worst known flood on October 30, 1824, even claimed lives. Master stonemason Heinz Lenuzza donated a stone for the 1989 State Garden Show, which indicates some recorded flood levels.

With Bietigheim's elevation to an administrative town, construction of the Württ. Amtsschloss began. From 1506 it was the seat of the Vogt (Old Castle in the southwest). From 1542 it was expanded to its current size. In 1707 it burned down, with the exception of the Vogtei, and was rebuilt in 1707-1712, renovated in 2000/03. The castle in Bietigheim-Bissingen itself houses, among other things, the town's music school, the Schiller adult education center, the cultural and sports office, the Rossknecht house brewery, and two shops.

The historic pipe fountain is supplied via pipeline from two springs in the "Staigbrunnen" area from across the Enz. Built in 1557 in place of an older fountain, at a square-like street intersection. In the octagonal basin, completely renewed in the 20th century, stands a baluster column with the Württemberg coat of arms and the city's tower coat of arms, as well as four water spouts. Atop the column sits the "maiden" that gives the fountain its name, a Melusine.
