It's beautiful here. You can cycle leisurely through the dunes, sometimes up and down, and the cycle path is nice and wide, so you don't get in each other's way. If you want to get to the sea or further into the dune landscape, there are plenty of rest areas where you can leave your bike and lock it up, allowing you to continue on footpaths. There's a good reason why you're not allowed to leave the paths. Both the landscape and the wild animals and farm animals (especially sheep) that live here should be left alone.
